Maekawa-san explains this goodbye line of Maria in SA2:

A fan addressed a rumor about the difference of Maria's line between Japanese and English versions that says Maekawa-san changed the line from 'Adios...Shadow the Hedgehog' (Japanese version) to  'Sayonara...Shadow the Hedgehog' (English version) as an homage to Terminator 2's Spanish version and Japanese versions.

Maekawa-san replied as follows:
"For this, I was told that 'adios' in English version would make people think of a Mexican, and also it wouldn't make the line as impressing as it should be, so I changed it to SAYONARA."

Interesting that foreign languages in diffrent cultures give different impressions!
Spanish is more foreign than English for Japanese, so it gives stronger impression to us.
It must be different in regions close to Latin America where Spanish is more common.
